Findlay Market Chili Cook-off Winning Recipe 2019

Congratulations to Vonnya Thomas, the new Chili Meister and winner of Findlay Market's Chili Cook-off! 

The Winning Recipe for VONNYA'S CHICKEN CHILI:

Ingredients:

3 tablespoons of vegetable oil

2 tablespoon of minced garlic

1 lb. of ground chicken

2 cups of Pepper Jack Cheese

1 lb. of skinless boneless chicken breast

2 teaspoons of ground ginger

1 can of white corn (drained)

1 teaspoon of Italian seasoning

1 can of diced tomatoes with chilies

1 teaspoon of red pepper

2 cans of black beans (rinsed)

1 pack of white chicken chili seasoning

2 cans of white beans / great northern beans

1/2 pack of Gold Star Chili seasoning

1 medium onion, chopped

5 cups of water

1 cup of diced bell peppers

1 cup of diced orange peppers

 

Directions:

Rinse and pat dry chicken breast. Add salt and pepper and bake for 25 minutes at 350 degrees. In a stew pot add the oil and ground chicken over medium heat and brown with peppers, onions and garlic. Then add the remaining ingredients (NOT THE CHEESE), reduce heat to low. Dice the chicken breast into bite sizes then add to the pot. Stir and allow to simmer for 20 minutes.
