Makes 2-3 servings.



  • Preheat the oven to 350 and lightly grease a 6x9 inch baking dish, set aside.
  • In a medium mixing bowl, combine crushed tomatoes, oil and vinegar. Stir in garlic, basil, herbs de Provence, salt, pepper and chili powder.
  • Pour mixture into dish and smooth in an even layer.
  • Place veggies on their side in an alternating pattern in the dish until there are at least two rows, the dish is full and you have run out of slices.
  • Bake for an hour until the sauce is bubbling and the veggies are tender.
  • Optionally, you can brush the veggies with olive oil for browning during baking.
  • Serve hot or cold.
