Guyere, Bacon and Green Onion Stuffed and Roasted Pumpkin

Serves 4.



  • Preheat oven to 350.
  • Cut the top off the pumpkin and scoop out the fibrous strands and seeds. Salt and pepper the inside liberally.
  • Mix the bread, cheeses and bacon in a large bowl.
  • In a small pan, melt butter over medium-low heat. Add green onions and cook for 4 minutes or until soft. Add garlic and stir 1 minute. Remove from heat and add to bread/bacon/cheese mixture.
  • Add snipped chives, thyme, and cream and mix. The mixture should be wet, but not dripping.
  • Fill pumpkin to the top with stuffing. Put the lid on the pumpkin and place on a baking sheet lined with non-stick Reynolds wrap. 
  • Bake for 2 hours in the center of the oven. Remove lid 1 1/2 hours into baking to let the stuffing brown.
