Sausage, Apple and Sage Stuffing Muffins

Serves 12.



  • Preheat oven to 375. Spray a muffin pan with no-stick cooking spray or line with baking cups and set aside.
  • Crumble sausage into a medium skillet and cook over medium heat until brown. Transfer to a large bowl. 
  • Add onion to the skillet and cook for 2-3 minutes, while stirring. 
  • Add apple and celery and cook and stir until softened, or 5 minutes. 
  • Add sage, garlic powder, all purpose seasoning and pepper. Cook for 1 minute. 
  • Transfer to bowl and add stuffing but don't mix. 
  • In a separate bowl, combine eggs and broth. Whisk until well combined.
  • Pour over stuffing and mix until all of the stuffing is moist.
  • Spoon into the muffin cups. Gently press and form slightly mounded tops.
  • Bake 20-22 minutes until golden brown. Allow to cool for 5 minutes before serving.
